Brazilian Farofa (Toasty Cassava Flour Goodness)

Farofa is the nutty, buttery, oniony cupid for your Brazilian plate of rice and beans: it will bring them together to create an absolutely delicious love story.

I love a basic farofa, just like this recipe. But after you have perfected this simple recipe, go ahead and add more flavor to your farofa: scramble eggs are so delicious and so is bacon and sausage!

This is a super easy recipe, perfect for beginners. It’s a must for churrasco (Brazilian barbecue)!

TIME: 30-ish minutes

INGREDIENTS:

  • 1/2 to 3/4 cup of butter (less is drier, more is clumpier)
  • 1 medium to large onion
  • 2 cups of (coarse!) cassava flour

INSTRUCTIONS:

  1. Slice the onion in thin circles.
  2. Set the stove to medium heat. Let the pot get really hot. Add the butter and let it melt completely. Add the onions and make sure all the onions are covered with butter. Every minute or so, stir and make sure all onions are browning evenly. The process of browning will take 20 minutes.
  3. Add the coarse cassava flour. Mix the onion and the cassava flour and keep stirring for about 10 minutes so the cassava flour is toasted evenly. Add salt to taste. You’ll know it’s ready when the cassava flour color changes from a light yellow to a light golden brown.
